    All creatures great and small at Cornucopia Biodynamic Farm in the Hunter Valley, eat premium certified organic feed and range on lush biodynamic pastures and river flats at their leisure - all day, every day.

    The chickens enjoy fresh air and green grass all day, every day, and come and go freely from 3 cosy houses in which they lay their eggs and spend their nights. Built on skids, these houses are moved every few nights to ensure fresh pasture for the birds as well as an even distribution of their valuable manure. Periodically, cattle are introduced to the riverflat, adding to its biodiversity.

    All Cornucopia birds are exposed to fresh air and sunlight from their hatchling beginnings. Providing plenty of green pickings, ensures healthy immune systems and contributes to the rich yellow colour of the yolks.
    Under the watchful and caring eyes the farmer, Cornucopia's organic chickens produce fresh eggs every day (depending on the season), which are all collected, graded and packed by hand.

    Birds are grown under similar stress free conditions. They have their own style of movable houses with free ranging access to quality feed, fresh water and green pasture.

    Prolonged drought conditions continue to impact on feed and freight costs, making good quality eggs and chicken costly to grow.
     
    Egg yolk and shell colour
    Egg yolk and shell colour do not indicate the nutritional quality of the egg
    The egg yolk colour increases with the amount of fresh green grasses and certain type of grains consumed by each hen and their exposure to sunlight. As the hens are free to eat and roam where they please, egg yolks may slightly vary in colour. Clarendon Farms aim to keep a consistent egg yolk colour. Egg shell colour depends on the age, type and colour of the chicken.

    Egg size
    The minimum weight is 70g per egg, with most being over, even up to 80g so you end up with a greater total size.

    You'll find within just 1 dozen there will be some eggs up to 80g, most between 65-75g and only a few between 60-65g . The nature of certified biodynamic organic real free-range eggs is that the eggs will be of differing sizes as the hens are naturally raised, unlike closed barn style batteries where they only pick very uniform shape and weights, whilst disregarding other eggs just for the look.

    Storage: Store these fresh eggs in the refrigerator, especially in hot, warmer, humid months. Also best to store in the carton or ideally in a sealed plastic container as egg shells are porous and absorb surrounding elements.
    The 'best before' date of each carton of eggs is around 3-5 weeks from collection. These eggs arrive into Sydney fresh from the farm every 2 weeks depending on supply.
