    Storage: Store these fresh eggs in the refrigerator, especially in hot, warmer, humid months. Also best to store in the carton or ideally in a sealed plastic container as egg shells are porous and absorb surrounding elements.
     
    The 'best before' date of each carton of eggs is around 3-5 weeks from collection. These eggs arrive into Sydney fresh from the farm every 2 weeks depending on supply.

    We’ve found across our journey that happy hens lay great eggs.

    There has been a lot of coverage of free range egg practises highlighted by Choice’s assessment. Here at Yamstick we’re proud of our sustainable farming practices and our care for both our hens and the environment.

    As a certified organic operation we are compliant with the ACO’s requirements to ensure we maintain our organic certification. The key organic operating criteria and Yamstick’s standard approach is:
     
     


     

    Domesticated chickens are said to originate from wild fowl found in the jungles of South East Asia. Here at Yamstick these conditions are replicated with over 70% of our property still covered in native hardwood forest ecosystems including sub tropical rainforest remnants. It is also a major catchment for our valley.

    Our hens love foraging through Yamstick’s native pastures and waterways. Our riparian (banks of a natural waterway) zone planting, commenced way back in 1998 under a Landcare initiative, provide natural and interesting patches for the chickens to scratch and forage. Our riparian zones provide other benefits including slowing the flow of water through our property and safeguarding against erosion plus ugly, unnecessary wash outs. They act as wild life corridors and encourage biodiversity.

    We reckon that if you want the freshest, tastiest organic produce there is then the best way is to grow it yourself in your own backyard. If you’re not lucky enough to be able to do that then try the next best thing, from our backyard.

    Each of our sheds are moved twice weekly, weather permitting. This is done to avoid excessive deterioration of our pastures. When the layers are first released onto fresh pasture the chooks initially show a genuine sense of excitement. This quickly transitions to contentedness across the entire flock as they fossick around within their own individual patch of fresh pasture, scratching and searching for items of interest. It makes the extra effort all worthwhile.

    If the sheds are moved too large a distance then a portion of the hens will huddle expectantly at dusk at the old shed site awaiting assistance to return them to the overnight safety of their sheds.

     
    Yamstick’s name comes from ganay, an indigenous word for a rod shaped digging tool used to dig yams. Our adjacent nature reserve is named after it.

    We consider ourselves extremely fortunate to be able to live and operate in such a pristine, natural environment. We believe that helps us create great tasting produce. Yamstick is surrounded by the beautiful but rugged Ganay Nature Reserve and Gladstone State Forest with the imposing Mount Gladstone the highest peak in the region plus its surrounding forest dominating the local backdrop. Both are large natural catchments for the water courses running through our property.

    We share our home with a plenty of native fauna and flora. There are an extensive range of birds, frogs and insects that provides an orchestra of sounds constantly varying throughout the day. Casually lounging carpet pythons, large yellow tailed black cockatoos with an amazing ability to eat the kernel out of macadamia and pecan nuts and wandering wallabies are all common as is a spread of bushtucker plants. There are also various predators including the occasional wedge tail eagle, hawk, wild dog or fox that we are largely reliant on our Maremma’s Snowy and Storm to help protect our roaming layers.

    In keeping with the spirit of Reconciliation, we acknowledge the people of the Gumbaynggirr nation, the Traditional Owners of the lands on which Yamstick Farm now stands. We wish to pay respect to their Elders – past, present and emerging – and acknowledge the important role Aboriginal people continue to play within our local community.

    The Gumbaynggirr nation covers a large portion of the mid north coast from the Nambucca River northward to the Clarence River and inland to the Northern Tablelands. The Gumbaynggirr people have occupied this land for thousands of years, forming one of the largest coastal Aboriginal nations in New South Wales. They are renowned as the ‘sharing people’ because their land was so rich that food and other resources were commonly shared with other indigenous nations.

    The egg yolk colour increases with the amount of fresh green grasses and certain type of grains consumed by each hen and their exposure to sunlight. As the hens are free to eat and roam where they please, egg yolks may slightly vary in colour. Farms aim to keep a consistent egg yolk colour. Egg shell colour depends on the age, type and colour of the chicken.

     
    Whites - if they are slightly runnier than usual it may be due to warmer temperatures and heat waves. Still fresh and fine to enjoy.

    Egg size
    The minimum weight is 60g per egg, with some being over, even up to 70g so you end up with a greater total size.

    You'll find within just 1 dozen there will be a variety of sizes aiming for an overal 800g dozen weight. The nature of certified organic real free-range eggs is that the eggs will be of differing sizes as the hens are naturally raised, unlike closed barn style batteries where they only pick very uniform shape and weights, whilst disregarding other eggs just for the look.
