A nutritional Superfood!

One of the oldest cultivated foods, a favourite legume with a mild nutty flavour. The basis of all our favourite's - hummus. Also known as the garbanzo bean.

A favourite ingredient to thicken and boost the flavour of patties, soups or stews and popular curries. Easily pureed into a delicious dip or spread (hummus), or make a side dish of mash, with your favourite seasoning. Add to casseroles and stuffings.

Soak chickpeas overnight in water before cooking. Cook 1 cup of chickpeas to 3-4 cups of water, boil for 3 mins then simmer for up 2 hours or until soft or as firm as you like.

Falafels: Soak chickpeas overnight in water. Boil for a few minutes, then simmer for 30 minutes. Allow to cool for 15 minutes. Blend, or process with parsley, coriander and mint, garlic, olive oil, ground cumin, cayenne pepper and salt. Form into balls, then flatten slightly to fry in oil, or bake in the oven for a healthy dish of falafels. Serve with tabouli, hummus and flatbreads.
