These cacao nibs - peeled and crushed cacao (cocoa/chocolate) beans - the source of all things chocolate, are the original heirloom 'royal criollo cacao' from Xoconusco in Mexico with over 360% more anti-oxidants than reg­u­lar cacao powder, 14 times more potent antioxidants than red wine, 21 times more than green tea, and 7 times more than dark chocol­ate! High in anti-aging and anti-inflammatory properties.

The exotic flavoured ‘criollo' variety represents only 1% of world production and is usually the highest priced in international commodity markets. By buying this organic raw cacao you are supporting a sustainable project that is rescuing this original heirloom variety of cacao, which has been grown by the mayans of Xoconusco since they originally domesticated the cacao tree over 3,000 years ago.

The certified organic indigenous growers use an age old system of permaculture, where the cacao trees are planted under the native forest canopy, along with other fruit trees, such as mango, avocado, papaya etc. All of these trees add their distinctive nuances to the fine multi-floral flavor of this exquisite cacao.

Fresh raw cacao beans are super-rich in bioflavonoids includix`ng flavanols which are strong antioxidants that help maintain healthy blood flow and blood pressure.

Cacao/cocoa is also a powerful mood booster - containing the important amino acid, tryptophan which makes serotonin - the neurotransmitter responsible for creating 'happy' feelings. Recipe: VEGAN BROWNIES WITH ALMOND CACAO ICING Makes 24 squares
Ingredients -
3 cups spelt flour
1 cup raw CACAO POWDER
1/2 cup raw CACAO NIBS
1/2 cup COCONUT PALM SUGAR
10 drops vanilla essence
1 Tbsp baking soda
2 tsp baking powder
2 tsp salt
3 cups milk alternative - hazelnut, almond, walnut etc
2/3 cup unsweetened apple sauce or pumpkin puree
2 Tbsp apple cider vinegar
1 cup pecans or roasted walnuts (optional)
1 cup GOJI BERRIES (soaked in warm water to soften for 10 minutes)
1 cup unsweetened coconut

1. Preheat oven to 160ºC and grease an 28 x33cm 3L pan with coconut oil.
2. Sift dry ingredients.
3. Blend wet ingredients.
4. Combine dry and wet ingredients and stir to mix well. Add nuts and goji berries.
5. Bake 25-30 minutes or until inserted toothpick comes out clean.
6. Cool before icing - garnish Brownies with fresh strawberries and chocolate shavings
Optional Variations - substitute pepitas for walnuts and add 1 teaspoon chilli powder….Viva El Mexico!!!

Almond Cacao Icing
1 cup milk substitute
3 Tbsp raw CACAO POWDER
3 Tbsp almond butter
1 tsp pure vanilla extract
3 Tbsp agave nectar or maple syrup
1 Tbsp arrowroot powder mixed with 2 Tbsp water

1. Combine milk, carob powder, almond butter and vanilla in a small saucepan over medium heat.
2. Add arrowroot/water mixture and gently boil until thickened.
3. Remove from heat and add honey or maple syrup.
