Growing:
It takes 130g of fresh kale to make 55g of dehydrated Kale Chips. This makes it a concentrated source of nutrition.

We source our kale from the organic farm out in Labertouche. Situated about two hours outside of Melbourne towards Gippsland, it’s a beautiful property with a nice big dam on it alongside a decent bit of forest.

Health Benefits:
Kale is one of the most nutrient dense foods on the planet. It is very high in fibre content and has no fat. Kale is an extremely rich source of Iron, Calcium and Vitamins A, K and C.

Kale is also a notable source of anti-oxidants such as beta-carotene, which is reputed to aid in maintaining health against many ailments, including heart disease, certain types of cancers and age related chronic diseases. Kale also possesses other Carotenoids such as Lutein and Zeaxathin known to protect the eyes from harmful UV rays. Kale is known for its highly beneficial anti-inflammatory properties.

Raw = Our Kale chips are dehydrated at 40 degrees Celcius.  This ensures the enzymes, nutrients and minerals are easily digested and available to nourish your body.
Heart Health

Cashews are great for your heart! They have a lower fat content than other nuts and approximately 75% of their fat is unsaturated fatty acids, with about 75% of this unsaturated fatty acid being oleic acid - the same heart-healthy monounsaturated fat found in olive oil. Studies show that oleic acid promotes good cardiovascular health. Studies of diabetic patients show that monounsaturated fat, when added to a low-fat diet, can help to reduce high triglyceride levels. Triglycerides are a form in which fats are carried in the blood, and high triglyceride levels are associated with an increased risk for heart disease, so ensuring you have some monounsaturated fats in your diet by enjoying cashews is a good idea, especially for persons with diabetes.
Minerals

Cashews are an excellent source of the minerals copper, magnesium, as well as zinc and manganese. Copper is important for the utilisation of iron, the development of bone and connective tissue and the production of the skin and hair pigment called melanin. Magnesium helps the body maintain a healthy ratio of calcium to potassium, and low magnesium levels may increase the risk of high blood pressure and heart attacks.

Packaging:
Dehydrated kale chips, unlike fried or baked goods, are extremely sensitive to oxygen and moisture and require a packaging type that ensures the integrity of the nutrients and quality of the product are maintained for its entire life cycle. We trialled a packaging film that is compostable and about 75% plant based, but this film was unable to keep the product crisp and therefore compromised the quality of the product. As a result, this meant we were forced to look at alternate film options that had a greater ability to keep the Kale Chips fresh.
