    Organically grown Heilala Vanilla beans are used in a glycerine based, cold extraction process to produce an alcohol free pure vanilla flavour and aroma. Vanilla seeds are suspended in the liquid to showcase the visual of real vanilla.

    What makes Heilala Vanilla different?
    The freshness and quality, named the richest grade in Asia pacific region, sets Heilala Vanilla apart. Full trace-ability from the source plantations direct to the consumers pantry ensures no traders, distributors, unnecessary handling and quality. Establishing the Heilala Vanilla plantation in Vava’u and partnering with growers throughout Tonga has provided employment along with resources which has enabled running water, housing and facilities for education.
     
    The richest grade of Vanilla in the Asia Pacific region calls for lots of tender love and care. The most perfect and natural growing environment meant that we were off to a good start. Add to this our organic growing principles and you get vanilla grown in organic virgin soil, on coconut husk frames, hand pollinated and dried under the Pacific Sun, then stored at optimum conditions to ensure full flavour develops.  This is what gives our 100% Pure Heilala Vanilla (of the Bourbon variety) its distinctive aroma, shine and plumpness!

    In order to develop the 300 unique flavour components of a vanilla bean the Heilala beans are traditionally cured and dried; a process which can take from three to six months. This curing process begins by blanching the beans in boiling water, and then wrapping the beans in bundles and sweating to begin the fermentation process. This is then followed by up to three months of drying under the South Pacific sun where the beans are placed in the sun each day and then placed indoors in the evening or when it rains. This traditional curing and drying method ensures the full flavour of the beans develops.
     
    What variety is Heilala Vanilla?
    Heilala Vanilla is the Bourbon variety, often called Madagascar Bourbon Vanilla. Madagascar Variety is described as creamy, sweet, and rich. The French planted the cuttings from Mexico in Madagascar and Reunion (formerly known as Ie de Bourbon) over 300 years ago and now eighty percent of the worlds Vanilla crop is Madagascar Bourbon.
     
    Is Heilala Vanilla Organic?
    When vanilla is grown by small growers in third world countries near the equator, it is typically grown organically. In the Kingdom of Tonga, one of the most pure and natural growing environments in the world all weeding, mulching, pollination, picking, drying, curing and grading is completed by hand and organic, spray free growing has always been practiced.
    An organic certification programme with NASAA commenced in 2013 however numerous challenges were faced based on the remoteness and the number of growers spread over several island groups. Certification as a processor was granted, however on consultation, until organic certification for growers is obtained, the processor certification is of little value. Heilala are currently revisiting their organic certification program to determine a detailed project plan and the level of investment required to complete full certification.
     
    Is Heilala Vanilla Fair Trade Certified?
    Heilala Vanilla was founded on strong Fair Trade practices. After a cyclone in the Islands of Vava’u in 2001, many community projects were completed and lead to the offer of a land lease in the village of Utungake. The chief of the village wanted to provide necessary employment for his community together with a sense of purpose and pride. Each year Heilala Vanilla undertakes projects in villages around Vava'u. Heilala Vanilla have been working with Fair Trade New Zealand on incorporating our current practices and policies into the Fair Trade Certification model.
     
     
    About Heilala Vanilla:
    Heilala Vanilla began as an aid project in 2002
     
    A vanilla plantation was established by the Ross family, in partnership with a local family from the village of Utungake in Vava’u, Kingdom of Tonga.
     
    In 2005 the first crop was harvested and snapped up by local chefs. Since these small beginnings and a first harvest of 45kg of dried vanilla beans, Heilala has partnered with growers throughout Tonga celebrating  their 10th harvest of vanilla beans in 2015. This has had a significant impact on the Tongan economy providing employment and infrastructure across a number of communities.
     
    Products are sold into specialty food retail and fine dining establishments and gourmet food manufacturers in New Zealand, Australia, Singapore, Japan, Brazil, Denmark and the United States.
    As well as being a huge boost for growers in Tonga, Heilala’s growth and global push is proving to be good news for other vanilla producers. Heilala recently partnered with a new group of vanilla growers in Madagascar. This additional supply of vanilla beans has been selected as they match the flavour profile of the Tongan beans and will be used when required in the manufactured product range.
     
    Heilala is also aiming to get the vanilla industry in the Cook Islands off the ground by assisting and advising growers there. Vanilla growing is still in its early stages but Heilala hopes to include the Cook Islands in the future supply chain.  
     
    Recently, Heilala have partnered with Oxfam New Zealand and the  the Tonga National Youth Congress (TNYC) to produce Heilala Virgin Coconut Oil.
     
    In 2013, the Heilala Vanilla Foundation was established to ensure the ongoing sustainability of their unique partnership with the community in Tonga. The Foundation is a registered charitable trust with the NZ Charities Commission and each year selects a project to benefit the people of Vava’u.
