A delicious nutty grain. Higher than modern wheat in protein, amino acids, fibre, vitamins and minerals such as vitamins B1, B2, B3 and manganese. Spelt contains all of the eight essential amino acids. This highly nutritious combination can reduce cholesterol, maintain a healthy heart, and and reduce sugar levels.

The nutty flavour of the spelt grain is said to contain anti-oxidising properties we all need. A preferred flour to those wanting an easily digestible, healthy and nutritious version to processed conventional wheat flours.

Four Leaf's Stoneground Unbleached Certified Biodynamic Wholemeal Spelt Flour (1kg)

(Try their Certified Biodynamic Spelt Flakes too for cereal or your favourite crumble topping!)

A superb Wholemeal Spelt flour produced by stone grinding the whole Spelt grain. This flour retains all the fibre, minerals and vitamins of the organic whole spelt grain. No bleaching, no additives, no further processing is done. The bran, wheatgerm and endosperm are retained. Less heat is created by the traditional stoneground method, preserving nutrients in the bran and wheatgerm.

Spelt is an ancient grain, a relative of wheat originally from Europe with a slight nutty flavour. It is well tolerated by many people who have wheat sensitivities as the protein is more easily digested.

Spelt is in the same family as today's wheat and oats but has very different properties. For instance, spelt is a softer gluten grain that is gentle to the digestive system.

The Spelt Grain (also known as Dinkel, Farro, or Asturia) contains less of the proteins that cause the symptoms of coeliac disease. Although a diagnosed coeliac could not use Spelt as an alternative to today's wheat and oats (and nor would anyone seriously ill attempt to try new dietary regimes without consulting their doctor etc.), however, many allergen sensitive people do find these ancient grains can be tolerated.

Uses: A light brown colour, this wholemeal version of Spelt is more nutritious than white versions, where the bran is removed. A good choice for healthier baked goods. Try wholemeal bread, pizza bases, cakes or wholemeal spelt blueberry muffins.

Wholemeal flour absorbs liquids easily. More liquids may need to be used in wholemeal flour recipes. You could also let your mixture settle for a short time after mixing to observe the final consistency and if additional liquids should be added.

About Four Leaf Farms:
Four Leaf Farms - certified biodynamic since 1989. A clean and fertile farm in a uniquely balanced ecosystem, situated in a region of rich red brown earth in the hills and plains of the Tarlee district in South Australia. Herbicides, pesticides, fungicides or fumigants have never been used.

Four Leaf Milling Pty.Ltd. was established in 1968 to process the grain from Four Leaf Farms and to maintain control over quality of the finished grain product. Grains in our Four Leaf products are grown on our farms and other selected certified Australian Bio-dynamic and Organic farms.

Our innovative stone milling methods coupled with stringent certification and inspection requirements guarantee that products of the highest quality are produced.

Four Leaf Milling Pty Ltd is a family company. The five members of the Dunn family are all involved in this vertically integrated operation, which includes farming their 2,500 acre farm, operating their own mills and packaging and distributing their own product.

Clean, Fertile Farm:
The farm that has been certified bio dynamic since 1989 has been chemically 'clean' for the past 80 years, the only blemish being one application of super phosphate in the early 1940's. The farm is located in rich red soil country near Tarlee, South Australia's prime cereal growing area. Farming practices place great emphasis on continually improving soil.

Vertically Integrated Allowing Quality Control:
The majority of the Four Leaf products are grown on Four Leaf Farms, particularly those derived from wheat, barley, oats and rye, allowing highest quality control at all process stages. The area is considered to produce some of the best oats in Australia and Flour Leaf's bio dynamic rolled oats, which even when independently tested were found to have some of the highest levels of Vitamin E ever encountered.

Own Design and Built Milling Operation:
The family has designed and built the milling equipment used including Sienna granite stones required to meet the rigid specifications for high quality flours. These stone mills ensure the grain is milled at slow speed without excessive heat thus preserving the integrity of the quality and vitamin content of the flour.

Vast Organic/ Bio Dynamic Experience:
Gavin Dunn is one of the most experienced and knowledgeable Organic/Biodynamic farmers in Australia, having been the founding member and Chairman of the Biological Farmers of Australia, an adviser to the Federal Government and has represented Australia on international committees.
