Which rice should I choose for my risotto today?:
Arborio - Most commonly used for risotto, has a slightly chewy centre and makes a creamy risotto, easy to overcook, so you can end up with a messy risotto. The best known of the risotto rices, Arborio rice is the largest grain, which is why it makes such a nice creamy risotto.
 
Carnaroli - Considered the 'king' of risotto rice and the best rice for making risottos, Carnaroli rice is famous for making a nice creamy risotto with well separated rice grains which will remain slightly al dente when cooked.  In particular Carnaroli rice has the added benefit of being hard to overcook,  hence makes a nice al dente risotto.

Vialone Nano - Good for wetter risottos and soups, absorbs more water. Of the 3, will be the most al dente when cooked. A much shorter grain. Of the risotto rices, Vialone Nano cooks the fastest, and is generally considered the best at absorbing flavours.

Baldo - Good for risotto, cooks quicker than other varieties, grains known to stick together making a creamy and soft risotto. Can be also used for any type of recipe including rice pudding.

Essenza - A cross between Thai Jasmine rice and Indian Basmati, well known for its fragrancy like a basmati aroma. Essenza rice is only grown in Italy. Not really a risotto rice, instead more of a wonderful day to day rice. Essenza can be used to accompany any dish you normally use jasmine or basmati rice.

How To enjoy:
Risottos are really simple to make, however everyone has a slightly different recipe - choose from your favourite cookbooks or websites.
Best tip is to use a flavoursome stock to create your risotto masterpiece.
 
Arborio and Carnaroli: It depends on your current recipe for risotto, you can simply replace Arborio rice for Carnaoli rice.
 
Vialone Nano: is better for wetter, almost soupy style risottos, so you will need more liquid, and don't panic if it isn't all absorbed. Otherwise it depends on your current recipe for risotto, but you can simply replace Arborio rice for Vialone Nano rice.
 
Baldo: Very similar to using Arborio rice, however Baldo rice cooks quicker so be careful to shorten your usual cooking time.
 
Essenza: Can be cooked in the rice cooker. As it is a blend of Thai Jasmine and Indian Basmati rice, it can accompany many types of dish, from Asian food to Indian food, or just as a simple side dish. It will not work well in a risotto.
