    The benefits of sauerkraut:
    Researchers in Finland have found that the process of fermenting cabbage produces isothiocyanates, a class of antioxidant-like compounds. "We are finding that fermented cabbage could be healthier than raw or cooked", said Eeva-Liisa Ryhanen, Ph.D., research manager of MTT Agrifood Research Finland. The fermentation process also produces other healthy compounds and enzymes not found in raw cabbage. Organic acids such as lactic acid that makes cabbage easier to digest, also aid in digestion of food in general. This research adds to the growing number of studies that show cabbage and other cruciferous vegetables such as broccoli, kale, cauliflower, and brussel sprouts are the best source of nutrients called indoles.

    How is Eden Organic Sauerkraut made?
    It's made from organic cabbage, chosen especially for its sauerkraut making qualities and fermented with Eden Sea Salt for six weeks, in stainless steel vats. During fermentation, the vats of sauerkraut are tended in a manner similar to a fine winery. Over seventy years of experience, traditional methods, and one family processing from soil to the jar gives Eden Organic Sauerkraut its homemade, old world character.

    Is EDEN Sauerkraut pasteurized and does it contain live Lactobacillus bacteria?
    Yes, in pasteurization lowered amounts. EDEN sauerkraut is heat packed and contains substantially lowered amounts of Lactobacillus bacteria. It does contain lactic acid and vitamin C, as well as other very important nutrients. Pasteurization is not sterilization. The aim and effect of pasteurization is to 1.) reduce the bacteria in a food that causes spoilage and 2.) eliminate the bacteria that are pathogenic. In contrast to sterilization, pasteurization is not intended to kill all microorganisms, only those that can cause illness or disease, and those that would cause the food to spoil. All sauerkraut merchandised unrefrigerated is heat-packed (pasteurized) to provide shelf life without refrigeration. Research has found that organic acids such as lactic acid found in EDEN sauerkraut aids in digestion of cabbage and aids in digestion of food in general.     How is it grown?
    Eden Organic Sauerkraut is made from the finest cabbage grown in nutrient rich organic soil, carefully tended, harvested, and fermented by USA family farmers. They tend hundreds of acres of vital soil enriched by years of sophisticated, on farm composting operations. They take tree leaves, their own organic production by-products and skillfully make rich organic compost. Soil thus enriched retains moisture, does not require irrigation, and produces sturdy high Brix plants. Brix is a measurement of the natural sugar content in foods. This intelligently managed soil, and the hot days and cool nights of a Northern summer produce highly nutritious and delicious cabbage.

    Harvest:
    Organic cabbage is hand harvested at the peak of its flavor, cored, washed, and shredded. The cabbage is then placed in stainless steel vats with the finest sea salt and fermented for at least six weeks. During the fermentation process the vats are managed in a manner similar to a fine winery.
