    Apple Cider Vinegar has been highly regarded throughout history. In 400 B.C. the great Hippocrates, Father of Medicine, used it for its amazing health qualities.

    The 'Mother' in apple cider vinegar is the good acetic bacteria which are responsible for many health benefits:
    - as a preventative tonic, consuming mother of vinegar strengthens many body systems and improves the immune system
    - helps circulation by thinning the blood and combating bad cholesterol
    - removes mineral deposits that are responsible for arthritis and bursitis and
    - helps the body achieve balance (homeostasis) with greater ease.

    When taken on a daily basis, mother of vinegar serves as an antibacterial and antifungal agent. It can also be use topically to control fungus or to clean a wound. Mother of vinegar applied to the skin can relieve itching, muscle pain, and certain skin rashes.

    Mother of vinegar can also help you to lose weight. It is said to help to reduce the excess fat in cells, decreasing cellulite and promoting weight loss.

    About two spoonfuls of apple cider vinegar that contains mother of vinegar should be taken daily. It is best to dilute it in a large glass of water mixed with honey to lessen the harsh taste of vinegar.

    The 'Mother' of vinegar is usually filtered and killed by pasteurisation in most non-organic vinegars. So choose a traditional Certified Organic brand such as Bragg which is also delicious and healthy.

    About Us:
    CoralTree is a professional family business, based in Otaki, producing the finest Apple Cider Vinegar and Apple Juices from Organic, locally grown, whole fruit.

    For many years we were based at the Coral Tree orchard in Levin, but with the growing volumes and compliance issues we have recently moved to a larger commercial site in Riverbank Road, Otaki.

    We use only organically grown “old world” apple varieties to create our extraordinary product and I have recently planted another small block to ensure ongoing availability of the rarer types of apples. CoralTree uses an oak maturation process that can trace its origins to Hippocrates, the father of medicine in 400BC. Our vinegar is often cloudy, due to the fact that we don’t filter and the naturally occurring fermentation process (known as the “Vinegar Mother”) creates a hazy appearance. This is your guarantee of the authenticity of the organic fermentation process.

    The Future of CoralTree:
    CoralTree Organics have been involved with the Tree Crop Assn, researching into the nutritional health benefits of different varieties of apples, with particular interest in Cancer and Diabetes. After extensive research (click here to view full details), two particular varieties (Monty’s Surprise and Takapuna Russett) were found to have very high levels of chemical compounds which were beneficial in treating these health issues. Many of the modern varieties of apples are very low in these compounds.

    CoralTree has been growing old fashioned varieties for the last 10 years and is currently working on extending its orchards with plantings of Monty’s Surprise and Takapuna Russett, so that in future our vinegar and juices will be even more nutritional.
