Millet, not actually a grain but a seed, is naturally gluten free and a good source of nutrition. It is a prehistoric food that originates from North Africa.

The texture of millet is dependent on cooking time. It is a great alternative to rice, served with curries and casseroles, porridge or mash. Cook it longer to create a texture like that of mashed potato.

How to cook: Perfect as a porridge, mash, a rice substitute, as a side dish, in risottos, pilaf, salads, add to soups and casseroles, in egg and milk based dishes e.g. puddings, souffles, traditionally used as couscous (wheat product) substitute. 

1. Boil ½ cup of millet to 1-1½ cups of water or stock.
2. Cover and simmer for 10-15 minutes. Sit for 5 minutes. Cook longer for mash or porridge. For a more creamy consistency, stir frequently whilst adding water gradually.
3. Roasting millet prior to cooking will provide extra flavour.
4. Add 2 teaspoons of organic extra virgin olive oil and seasoning for extra flavour.

Try adding any of the following to the dry grain before adding stock -
* minced garlic or ginger
* a squeeze of lemon juice for a perfect balance of flavours
* grated citrus zest or finely chopped preserved citrus e.g. lemon, orange, mandarin
* a pinch of cinnamon or all spice
* chopped dried apricots, sultanas and pine nuts
* shredded fresh herbs such as mint, oregano, marjoram or lemon thyme.

Serve: Hot, cold, plain or flavoured - a versatile accompanying dish.
