We source our wakame from sustainable wild harvest from an introduced population in Tasmania (certified organic).
Generally speaking there are many applications for seaweed but this Wakame is by far the most versatile and user friendly, when re-hydrated it has soft blades and is silky smooth to eat in stocks, soups, broths or stews delivering a warming umami punch. 
Don’t restrict your thinking to this just being an Asian flavour, it was in the 1800's when the famous chef Auguste Escoffier revolutionised cuisine with his rich jus and reduced stocks which delivered concentrated savory flavours otherwise known as the 5th flavour, 'Umami'.
How to enjoy:
Rehydrate in cool water for 20 minutes or blanch in boiled water. Add directly to savoury dishes.
Try making a simple dashi-style broth to poach meats or simply add a couple of small pieces in your bolognaise as a flavour enhancer.
It is also delicious as a salad ingredient! Simply rehydrate the wakame and season with fish sauce, lime, sesame oil, sesame seeds and finely chopped green onion.
