    What is it?
    Buckwheat, despite its name, is not actually wheat. In fact it is not even a grain.

    It is a fruit, belonging to the Achene family of fruits, which includes strawberries. Buckwheat is used like a cereal grain. Called a ‘pseudocereal’ and unrelated to wheat, it is naturally gluten-free, perfect for wheat sensitivity.

    Buckwheat has a distinct nutty flavour, add it to soups and stews. Ideal for a gluten-free porridge or tabouli.

    How to enjoy:
    - Can be sprouted and added to stir fries, salads or breads.
    - Or soak and then toast and add to muesli or eat as a snack in trail mixes.
    - Cook - Add to soups and stews for added nutrition. Boil and simmer for 25 minutes or until tender.

    Sprouting:
    1. Soak in 2-3 times more water (cool) for 20-60 minutes - buckwheat groats soak up water very quickly.
    2. Rinse with cool water, at least 3 times until the water is clear - buckwheat produces very starchy water so rinse very, very well.
    3. Rinse thoroughly again at least 3 times a day.
    4. Drain well to avoid groats becoming waterlogged.
    5. Keep in ambient room temperature away from direct sunlight in your sprouter.
    6. Eat anytime from when the tiny tails appear.
    7. Dry and drain well before storing the refrigerator if necessary, or eat immediately.
