Yacon is a useful sweet food for diabetics because its carbohydrates are stores in the form in inulin (a prebiotic), which releases into the bloodstream slowly.

Yacon also acts as a pre-biotic and thereby helps the intestines to function efficiently and eliminate toxins and waste products from the body.

Prebiotics vs Probiotics and Food Combining:
Prebiotics are natural fibres found in plants, honey and in Yacon Syrup, that feed the good bacteria in our bowels. Probiotics, such as in yoghurt and kefir, are additional good bacteria to further aid digestion with the existing good bacteria in our body. Added probiotics and enough nutritional prebiotics help 'crowd' out bad bacteria formed due to the inability to digest and the putrefaction of bad foods, or foods badly combined in our consumption e.g. concentrated protein (meats, poultry) and starch (potatoes, rice, pasta, bread).

Concentrated protein requires acid enzymes (pepsin) to digest vs Starch requires alkaline enzymes (ptyalin). Alkaline enzymes act first in the mouth to digest, and by the time the food has reached the stomach, the alkaline enzymes have neutralised the acid enzymes - hence the concentrated protein takes longer to digest, or does not at all. Bad bacteria forms due to the putrefaction of the protein. Light proteins e.g. nuts, beans are fine to digest with starch.

What is it?
The yacón root from Peru is a distant relative of the sunflower. It grows in the warm, temperate Andean valleys at elevations below 3,500 m. Its delicious edible tubers, which are sweet and low in calories, hold a variety of benefits. It has a mild sweet flavour and an unusual moist, crunchy texture slightly reminiscent of fresh-picked apple, pineapple and watermelon.

Yacon acts as a pre-biotic and thereby helps the intestines to function efficiently and eliminate toxins and waste products from the body. It strengthens and activates the good bacilli like L acidophilus and B bifidum which in turn helps enhance our immune systems and helps suppress putrefactive pathogens such as Candida albicans.

It has these qualities because it’s comprised of long-chain complex sugars known as Fructooligosaccharides (FOS), which are not absorbed and digested in the same way as short-chain simple sugars.
