    Agar agar is a high protein, plant based, seaweed extract, nutritious, traditional gelling, stabilising and thickening ingredient, used for centuries in Asia e.g. Malaysian desserts. Unlike gelatine which is derived from animal bones, agar agar is suitable for vegetarians and vegans.

    As it is made from seaweed, an organic agar agar has been difficult to find. Finally Natali has sourced an organic agar agar that is approved by IFOAM (the International Federation of Organic Agriculture Movements).
    Natali's Organic Agar Agar is harvested from the Atlantic coast of France, and has been certified as organic by Agriculture France. This ensures strict regulations are followed during growth, harvesting, and packaging of the organic agar agar.

    How to enjoy: Organic agar agar can be used to make jellies, mousse, glaze for your pastries, or to thicken a sauce. It is widely used in Asian cuisine and can even set puddings without refrigeration, though it is always quicker to use a fridge.

    Really simple!!

    1. The average dose for a good texture is 4g (one small sachet in the smaller 2x 4g packs) per 1 litre of water.

    2. Then dissolve the agar agar in a cold liquid and bring to the boil.
    Cold liquid - water, fruit juice with fruit pieces, coconut milk or coconut cream with palm sugar, pandan flavouring, green tea powder, almond flavouring, berries - anything you want ... coffee, hazelnut milk and more endless ideas..

    3. Leave to cool (best in the fridge), gelling occurs upon cooling.
