What is it?
The cacao butter used to make this chocolate is Fair Trade Certified. Fair Trade standards ensure that producers and their community receive a fair share of the benefits of trade, thus improving the quality of their lives.
We have sweetened this chocolate bar with Organic Evaporate Coconut Nectar from the island of Java, Indonesia. This low GI (35), mineral rich sweetener, produced from coconut palm blossoms is considered the most sustainable in the world and makes a great cane sugar alternative.
We guarantee the premium Criollo Cacao used in this bar has been bought from cacao farmers in Satipo for more than 15% above the fair trade price.
We also support the Criollo community by helping them add as much value as possible to raw materials at the point of origin.

Two to three squares of our Hazelnut Mylk Chocolate makes for a luxurious and decadent experience.
Hazelnut Creamy Mylk Chocolate melts at a lower temperature than our other chocolate due to its healthy coconut fat content, which has a lower melting point than Cacao Butter. Therefore, it's best to store it in the fridge to get that crunchy snap. If it melts it's still fine. In fact, some people love it that way.

During the warmer months our chocolate can sometimes melt in transit. There is an increased chance of this in the case of our Hazelnut Creamy Mylk Chocolate since it includes whole coconut flesh, which contains healthy oils with a low melting point. Please find tips on ordering and storing your chocolate.

- Please consider waiting until Monday to complete your order if weather conditions are hot.
- If you provide an Authority To Leave, please consider leaving it somewhere cool e.g. in the shade or in a box or cool bag you have left out.
- If your package is warm to the touch when it arrives, please place your chocolate in the fridge for two hours. At that stage it should have a firm consistency and be fine to eat.

Packaging: We are happy to share with you that our packaging for the chocolate bars is 100% biodegradable. The clear film that the bar is flow wrapped in is a compostable certified film made from plant material so you can throw it in your compost and it will break down in a couple of months. The box is made from 80% post consumer recycled material and it is printed with vegetable inks.

Raw Cacao :
Loving Earth chocolate is made with raw Cacao. This means our chocolate has up to twice as may antioxidants as conventional chocolate. We use organic evaporated coconut nectar (a natural, low GI sweetener) instead of cane sugar to create this delicious chocolate bar. It contains no cane sugar or dairy and is suitable for vegans.
Raw Cacao: It is essentially uncooked, unprocessed chocolate in its pure rich essential form sweetened with our organic coconut sugar (a low GI sweetener). It is a wickedly decadent healthy treat. The cacao beans are not roasted and this means that their wealth of phytonutrients are fully intact. Our Raw chocolate has been independently tested by Southern Cross University to have up to 2 times the antioxidants of conventionally processed chocolate. (See comparison below)
How it's processed?
We put our raw cacao nibs and coconut sugar into a grinder, which we chill with a special water jacket to maintain low temperatures. We then temper it, which means stabilising the structure of the chocolate. At 42°C, the crystalline structure in cacao fat disappears. If you take that 42°C, bring it down to 28°C and finally warm it back up to 33°C, you end up with a crystal structure which is very stable, giving our chocolate a gorgeous sheen and a clean, satisfying snap.
Coconut: The coconut we use at Loving Earth is certified organic and sulphite free. A rich source of lauric acid (antifungal, antimicrobial), coconut is also a rich source of dietary fibre.
This raw 'mylk' chocolate has a nice clean snap and smooth texture and beautifully complex flavour. The evaporated coconut nectar gives the flavour a wonderful depth with toffee citrusy notes while making the bar extremely healthy. You are able to enjoy all the powerful antioxidants in the cacao with the low GI mineral rich sweetness of the coconut sugar.
Fairtrade: The raw cacao from the premium Criollo cacao bean has been bought from the Satipo Cocoa Co-operative, Peru for more than 15% above the fairtrade price. Loving Earth also supports the Satipo Community by helping them add as much value as possible to raw materials at the point of origin.
Antioxidants:
Raw Cacao beans contain 10 grams of flavonol antioxidants per 100 grams, which is an incredible 10%. Research has also demonstrated that the antioxidants in cacao are highly stable and easily available to human metabolism. In the adjacent table you can see that raw cocoa powder has set the world record for antioxidants with nearly 4 times the amount of antioxidants as Goji Berries.
The ORAC (Oxygen Radical Absorbance Capacity) scale was developed by the United States Department of Agriculture to measure the ability of antioxidants to absorb free radicals, which normally cause cell and tissue damage. The higher the ORAC score, the higher the level of antioxidants present in the food.

Magnesium for the Heart and Brain:
Raw cacao is the primary dietary source of magnesium, the most deficient mineral in western civilisation. Magnesium is the most important mineral for a healthy functioning heart. It also plays a key role in producing energy for the neurons in the brain from glucose. So when there is an abundance of magnesium the brain works with clarity and focus.
Mood elevators and Anti-depressants:
Cacao is a great source of serotonin, dopamine, anandamide and phenylethylamine (PEA), four well-studied neurotransmitters, which are associated with feelings of well being and help alleviate depression. Both PEA and Anandamide (the bliss chemical) are found in abundance in the brains of happy people and are particularly released when we are feeling happy. Both of these nuerotransmitters are present in raw cacao in large enough quanitities to affect the brain and lift our moods. Cacao also contains monoamine oxidase inhibitors (MAO Inhibitors) that keep neurotransmitters in the bloodstream for longer without being broken down.
We have all experienced the positive feelings associated with eating chocolate, now we have access to pure raw unadalterated chocolate in the form of organic raw cacao. This is much more potent than the processed chocolate and doesn't have any sugar or dairy products blocking the positive effects of all the goodies in raw cacao. My experience is that eating 11 raw cacao beans is enough to experience a blissful sense of well being.
