    Cup Gum (E. cosmophylla) is a light delicate raw honey, known for its delicious hint of caramel. This is a beautiful winter flowering tree, small and rugged with large leaves, large cream flowers and a beautiful pink timber. The precious Cup Gum only flowers every 1-2 years.

    Premium Certified Organic Raw Cup Gum Honey by Island Beehive - Kangaroo Island's most famous honey producer and home to the world's only remaining pure strain of Ligurian honeybee.

    This single varietal honey comes straight from the producer, so is of the highest quality from Island Beehive. It is not mixed with other varieties, to retain its purity and distinct flavour.

    Collection of honey takes place from the Island's 30 species of flowering eucalypts, a myriad of other Australian trees and shrubs, wildflowers and other introduced flora. The amount and varieties of honey produced can be affected by seasonal conditions.

    The variety of nectar collected by the bee also controls the outcome of colour and flavour, with some honeys very dark with bold flavours whilst others are light and more delicate.

    Honey to our tables: The following process occurs -
    "harvest - storage in bulk containers - slightly heated at low temperatures to - bottle in customer size containers, stored till - customer purchase - open to enjoy!"


    Honey never expires due to its high anti-bacterial qualities. Only a packaged date is provided on the jar. Honey has been regularly found in ancient Egyptian tombs, opened today in perfect condition, able to be enjoyed.

    RAW honey is extracted and packed at low temperatures to retain its natural colours, flavours and its many nutritional qualities - vitamins, minerals and important enzymes necessary for our health.

    Why are some honeys more liquid vs candied, crystallised?
    Liquid honey has been heated hence its runnier nature. The higher the heat, the more liquid the honey. This is not good as it destroys alot of the nutrients.

    This RAW honey will be slightly naturally candied, crystallised or creamed due to time, seasons (winter vs summer temperatures) and the low temperature extraction method to produce a
    premium quality, and healthier honey, guaranteed and certified to be free of all contaminants.


    Also, honey that has been more recently bottled maybe more runny due to the low pre-heating prior to bottling and time even if it is from the same harvest compared to an earlier bottled container.

    So a naturally candied honey is proof of the ORGANIC RAW nature of the honey.

    How can I dissolve the crystals in my raw organic honey?

    1. Heat your honey in an oven at 50-60°C for a few minutes to allow a gentle heating to dissolve any crystals.
    Any higher temperature will burn the honey and reduce its nutritional benefits. After your first try, you will find the ideal time. Set your temperature and time so you can reduce the risk of overheating.


    2. Leave your honey in a warmer spot before use, to allow the raw honey to warm alittle for a smoother consistency. Ideal in warmer, sunnier weather.

    3. Place a bowl of your honey over a warm (not hot) double boiler or on top of a cup/bowl of warm/hot water around
    50-60°C. Stir and melt.

    No microwaves please!
