    Whole Dried Japanese Shiitake Mushrooms (50g) - macrobiotic quality, traditionally grown by Spiral Foods.

    Shiitake Mushrooms have been prized as an "Elixir of Life" since ancient times. Used as a medicine and as a delicious food for thousands of years in Asia.

    These macrobiotic quality shiitake mushrooms are grown in the traditional way on oak logs and are an absolute storehouse of valuable nutrients.

    High in iron, protein, vitamins and minerals notably Vitamin C. Shiitakes are also one of the highest sources of the powerful anti-oxidant L-ergothioneine which is not destroyed when the mushrooms are cooked. Shiitakes have been found to boost the immune system, also with anti-bacterial qualities.


    How to:
    1. Soak whole dried shiitake mushrooms in a bowl of clean filtered water overnight or for a few hours in the refrigerator. Or for 30 minutes in warm water on the countertop.
    2. Drain and reserve liquid.
    3. Trim mushrooms and slice into thin strips, pieces or use whole.
    4. Add to miso soup, stir fries or any other dish in the last 5 minutes of cooking. If using whole in stocks or hearty soups, add at least in the last 10 minutes of cooking.
    5. Add to any salad, eat raw and season with your favourite dressing.


    Ingredients: Traditionally grown, macrobiotic quality, whole dried Japanese shiitake mushrooms (lentinus edodes).

    Store:     In a tightly sealed container in either the refrigerator or freezer where they will stay fresh for six months to one year.

    Shiitake Sauce recipe:
    Ingredients:
    50g Whole Shiitake Mushrooms
    2½ cups of warm water
    4 large shallots or cloves of garlic, peeled and minced
    2 Tbsp Shoyu Soy Sauce
    1 tsp fresh lemon juice
    2½ Tbsp kuzu (a nutritious thickener...coming soon to the Organic Buyers Group)
    1 Tbsp Eden Mustard - Brown or Yellow.

    1. Soak the shiitake mushrooms in a bowl of warm water for 20-30 minutes.
    2. Drain and reserve liquid.
    3. Trim mushrooms and slice into thin strips, pieces or use whole.
    4. Heat 2-3 Tbsp tablespoons of reserve liquid, add shallots or garlic, and 1 Tbsp of soy sauce. Bring to simmer, stirring until shallots are tender.
    5. Add remaining reserve mushroom liquid except for ¼ cup. Add remaining soy sauce and all the lemon juice.
    6. Dissolve kuzu in ¼ cup of reserve liquid. Add to simmering sauce, stir until thick and translucent.
    7. Add mustard to taste. Serve hot.
