Criollo Cacao Nibs - Cacao is the ancient superfood of kings. It is the seed, of the Amazonian tree, the source of all chocolate and cocoa.

The cacao bean is simply crushed to create healthy raw cacao nibs. No sugar or additives, and packed with antioxidants.


Delicious and nutritious, one of the highest sources of antioxidants and an excellent source of minerals - magnesium, sulphur, calcium, iron, zinc, copper, potassium and manganese plus some of the B Vitamins.

Unsweetened, and low in caffeine - all
natural products vary, with cacao nibs containing about 1% caffeine - compared to tea at 4% and coffee which can be more than 10%!

How to use: Use as you would dark chocolate, chocolate chips or cocoa in cooking, as a health food snack or in muesli and trail mixes.

- Grind with your coffee beans before brewing for a delicious coffee/chocolate drink. Great cold!
- Add to your favourite muesli or trail mix.
- Sprinkle over ice cream or yogurt.
- Add to muffins, cakes or biscuits for added nutrition and a great flavour.

Use any time you would use dark chocolate!
 
 
Why are they so good and delicious?
Fresh raw cacao beans are super-rich in bioflavonoids including flavanols which are strong antioxidants that help maintain healthy blood flow and blood pressure.


Cacao/cocoa is also a powerful mood booster - containing the important amino acid, tryptophan which makes serotonin - the neurotransmitter responsible for creating 'happy' feelings. Also contains other naturally occurring phytochemicals like theobromine - an aphrodisiac, phenylethylamine (PEA) – released when we fall in love, and anandamide - the ‘bliss' chemical.
 

Raw Cacao Nibs - At no stage in the processing does the temperature go above 45 degrees Celcius (113 Farenheit).

Recipe: VEGAN BROWNIES WITH ALMOND CACAO ICING Makes 24 squares
Ingredients -
3 cups spelt flour
1 cup raw CACAO POWDER
1/2 cup raw CACAO NIBS
1/2 cup COCONUT PALM SUGAR
10 drops vanilla essence
1 Tbsp baking soda
2 tsp baking powder
2 tsp salt
3 cups milk alternative - hazelnut, almond, walnut etc
2/3 cup unsweetened apple sauce or pumpkin puree
2 Tbsp apple cider vinegar
1 cup pecans or roasted walnuts (optional)
1 cup GOJI BERRIES (soaked in warm water to soften for 10 minutes)
1 cup unsweetened coconut

1. Preheat oven to 160ºC and grease an 28 x33cm 3L pan with coconut oil.
2. Sift dry ingredients.
3. Blend wet ingredients.
4. Combine dry and wet ingredients and stir to mix well. Add nuts and goji berries.
5. Bake 25-30 minutes or until inserted toothpick comes out clean.
6. Cool before icing - garnish Brownies with fresh strawberries and chocolate shavings
Optional Variations - substitute pepitas for walnuts and add 1 teaspoon chilli powder….Viva El Mexico!!!

Almond Cacao Icing
1 cup milk substitute
3 Tbsp raw CACAO POWDER
3 Tbsp almond butter
1 tsp pure vanilla extract
3 Tbsp agave nectar or maple syrup
1 Tbsp arrowroot powder mixed with 2 Tbsp water

1. Combine milk, carob powder, almond butter and vanilla in a small saucepan over medium heat.
2. Add arrowroot/water mixture and gently boil until thickened.
3. Remove from heat and add honey or maple syrup.
