Our Cacao Nibs are an original heirloom criollo amazonico Cacao from Satipo in Peru. By buying this Raw Cacao you are supporting a sustainable project that is rescuing this original heirloom variety of Cacao, which has been grown by the Ashaninka and Chene people of the Peruvian Amazon for thousands of years.

These certified organic indigenous growers use an age old system of permaculture, where the Cacao trees are planted under the native forest canopy, along with other fruit trees, such as mango, avocado and papaya. All of these trees add their distinctive nuances to the fine multi-floral flavor of this exquisite Cacao.

How to use: Use as you would dark chocolate, chocolate chips or cocoa in cooking, as a health food snack or in muesli and trail mixes.

- Grind with your coffee beans before brewing for a delicious coffee/chocolate drink. Great cold!
- Add to your favourite muesli or trail mix.
- Sprinkle over ice cream or yogurt.
- Add to muffins, cakes or biscuits for added nutrition and a great flavour.

Why are they so good and delicious?
Fresh raw cacao beans are super-rich in bioflavonoids including flavanols which are strong antioxidants that help maintain healthy blood flow and blood pressure.

Cacao/cocoa is also a powerful mood booster - containing the important amino acid, tryptophan which makes serotonin - the neurotransmitter responsible for creating 'happy' feelings. Also contains other naturally occurring phytochemicals like theobromine - an aphrodisiac, phenylethylamine (PEA) – released when we fall in love, and anandamide - the ‘bliss' chemical.

Raw Cacao Nibs - At no stage in the processing does the temperature go above 45 degrees Celcius (113 Farenheit).

Health Benefits:
Raw Cacao Beans contain 10 grams of flavonol antioxidants per 100 grams, which is an incredible 10%. Research has also demonstrated that the antioxidants in cacao are highly stable and easily available to human metabolism. Magnesium for the Heart and Brain:
Raw cacao is the primary dietary source of magnesium, the most deficient mineral in western civilisation. Magnesium is the most important mineral for a healthy functioning heart. It also plays a key role in producing energy for the neurons in the brain from glucose. So when there is an abundance of magnesium the brain works with clarity and focus.
Mood elevators and Anti-depressants

Cacao is a great source of serotonin, dopamine, anandamide and phenylethylamine (PEA), four well-studied neurotransmitters, which are associated with feelings of well being and help alleviate depression. Both PEA and Anandamide (the bliss chemical) are found in abundance in the brains of happy people and are particularly released when we are feeling happy. Both of these nuerotransmitters are present in raw cacao in large enough quanitities to affect the brain and lift our moods. Cacao also contains monoamine oxidase inhibitors (MAO Inhibitors) that keep neurotransmitters in the bloodstream for longer without being broken down.

We have all experienced the positive feelings associated with eating chocolate, now we have access to pure raw unadalterated chocolate in the form of Organic Raw Cacao. This is much more potent than the processed chocolate and doesn't have any sugar or dairy products blocking the positive effects of all the goodies in Raw Cacao. My experience is that eating 11 Raw Cacao Beans is enough to experience a blissful sense of well being.

Ingredients -
3 cups spelt flour
1 cup raw CACAO POWDER
1/2 cup raw CACAO NIBS
10 drops vanilla essence
1 Tbsp baking soda
2 tsp baking powder
2 tsp salt
3 cups milk alternative - hazelnut, almond, walnut etc
2/3 cup unsweetened apple sauce or pumpkin puree
2 Tbsp apple cider vinegar
1 cup pecans or roasted walnuts (optional)
1 cup GOJI BERRIES (soaked in warm water to soften for 10 minutes)
1 cup unsweetened coconut

1. Preheat oven to 160ºC and grease an 28 x33cm 3L pan with coconut oil.
2. Sift dry ingredients.
3. Blend wet ingredients.
4. Combine dry and wet ingredients and stir to mix well. Add nuts and goji berries.
5. Bake 25-30 minutes or until inserted toothpick comes out clean.
6. Cool before icing - garnish Brownies with fresh strawberries and chocolate shavings
Optional Variations - substitute pepitas for walnuts and add 1 teaspoon chilli powder….Viva El Mexico!!!

Almond Cacao Icing
1 cup milk substitute
3 Tbsp almond butter
1 tsp pure vanilla extract
3 Tbsp agave nectar or maple syrup
1 Tbsp arrowroot powder mixed with 2 Tbsp water

1. Combine milk, carob powder, almond butter and vanilla in a small saucepan over medium heat.
2. Add arrowroot/water mixture and gently boil until thickened.
3. Remove from heat and add honey or maple syrup.
