As organic flours have no chemicals or nasties added to them, the smell of the grains (and hence the pasta) may be a little different from "typical" wheat / pasta.

The name “L'Abruzzese” originates from the Italian region Abruzzo, found in the middle of Italy approximately east of Lazio, the region which houses Rome. To be from the region of Abruzzo makes you an “Abruzzese” just as a South Australian comes from the state of South Australia. It is said that the best pasta in Italy comes from Abruzzo.
