    Porcini mushrooms are best known for their rich flavour and have been used predominantly as a spice.
     
    1g dried mushrooms = 8g fresh.
     
    Perfectly ground, ready to go to sprinkle on any dish, add to stocks, salads, rice and pastas.
     
    Wild is best: Meatier and stronger in flavour than cultivated mushrooms - wild is delicious!

    Ingredients: 100% Wild grown dried porcini mushrooms.
     
    Store: At room temperature in a dry place. Once opened, place in a tightly sealed container.

    A delicious recipe from Viking: Mushroom risotto

    30g Viking Porcini or Wild Forest Mix Mushrooms
    2 Cups of Arborio, Vialone Nano Semifino, or Carnaroli rice
    1 Large Onion
    1 bunch of Parsley
    Olive oil
    ½ L of Vegetable Stock
    1 Glass of Dry White Wine
    Salt, Pepper and Basil
    100g of Shredded Parmesan Cheese

    Leave the sliced porcini mushrooms in some warm water about 10 minutes to re-hydrate.

    Finely chop th
    e onion and sautee with olive oil until golden brown. Add the mushrooms, stock and wine. Spice with salt, pepper and basil.

    Simultaneously, heat another pot, add the rice and stir on dry for about 2-3 minutes. Then add half of the contents of the other pot constantly stirring. Cook until the rice soaks all the liquid. Reduce heat, add the remaining liquid from the other pot and simmer for another 20 minutes.
     
    Close to the end stir in half the parmesan cheese. If you think that there is not enough liquid, slowly add a bit of water at a time. The meal is ready when the rice is cooked.

    You can put the risotto in a large bowl, and then turn it upside down on a large plate for shape. Sprinkle the rest of the Parmesan cheese on top, decorate with parsley and serve.
