Umeboshi means "dried ume plums". Organic Umeboshi Plums are a traditional Japanese pickle. They are salty plums that have been soaked in a salt bath. Shiso leaves are added during pickling process to impart a reddish colour and natural flavouring.
The health-giving properties of Ume have been recognised for centuries.
Umeboshi's powerful acidity has a paradoxical alkalinising effect on the body, neutralising fatigue, stimulating the digestion, and promoting the elimination of toxins.
Spiral's plums contain shiso, which is added during pickling to impart a reddish colour and natural flavouring that stimulates appetite and aids in maintaining an alkaline system.
Good for an unsettled stomach, indigestion and morning sickness, our plums do not contain any artificial colourings, flavourings or sugar.
Umeboshi plums are usually round, unwrinkled to very wrinkled. Ume impart a tart flavour and can be eaten alone or added to all styles of cooking.
Harvest: Harvesting of ume plums starts in May, although our plums are picked in June to allow the ume plum to fully ripen. The plums are selected and pickled the same day as they are harvested. The amount of salt is determined by the quality of ume, using intuition and years of experience. Our farmers are true artisans. After pickling with salt, plums are sun dried for 3 days. They are turned frequently to dry both sides evenly. Once dried, the plums are pickled again. This last stage of pickling fine-tunes the plums for optimal taste and aroma. This process is all done by hand.
Umeboshi Puree is made from salty pickled plums that originated in China over 3000 years ago. Made by removing ume plum seeds and mashing the meat of the plum.
How to enjoy:
- Umeboshi is used as an ingredient for rice balls or eaten with a bowl of rice.
- Used as a seasoning in cooking and can be used to make sushi, rice balls and a variety of delicious dips, salsa, sauces, salad dressings and seasoned vegetable dishes. Imparting a delicious tomato-like flavour, it also makes great tofu ricotta and is great on sweet corn
- Enjoy eaten as is, or pop a plum in a cup of hot water and sip as a mild brew.
- Also puree into a dressing as in the recipe below.

Umeboshi Dressing
4-5 umeboshi plums
2 Tablespoons of sake
2 Tablespoons sugar
? cup water

1. Squeeze each plum by hand to pop out and discard the pit. Chop the flesh till you have about ¼ cup tightly packed.
2. In a blender, puree the umeboshi, sake, sugar and water to reach a smooth consistency. Add more sugar and/or water to taste.

Serve on steamed vegetables - broccoli, beetroot, sweet corn and salads. Great as a dipping sauce for sushi or crudites.

Umeboshi Dressing will keep for 3 weeks in a refrigerator.
