    Organic Quinoa pronounced 'keen-wa' is a gluten-free grain that is rich in essential amino acids, vitamin B2, E and A, and contains more iron than any other grain.

    Don't forget to wash before cooking!
    Imported quinoa is usually prewashed, rinsed of saponin and dried at origin. This Australian one is not, so it is essential to wash it well before cooking. Saponin is the natural bitter seed coating that protects seeds from hungry birds and insects, allowing it to germinate after the rain, to create more quinoa!

    How to cook quinoa:
    1. Wash well at least 3-4 times by stirring 1 cup Quinoa in water till water is clear. Do not soak quinoa before cooking - the bitterness will be absorbed by the seed and is almost impossible to remove. The first 2 washes are very important - the first wash will be dark and frothy; the second wash is not as dark as the first. The water will get clearer with every wash.
    2. Add 2 cups of water or stock - when cooking, refrain from putting too much water on top, the washing process makes the product already wet.  Not more than 12mm or ½ inch of water on top, too much water makes it soggy.
    3. Bring to the boil then cover and simmer for 10-12 minutes until all liquid has been absorbed, stirring occasionally.  Remove from heat and let the Quinoa dry slightly. High temperatures are not required to cook Quinoa, and may result in overcooking.
    3. Season with salt & pepper and your favourite herbs or spices. Once cooked a tiny white spiral appears encircling the grain.
    4. Can be added to salads, enjoyed instead of rice, can be frozen or any other dishes as below, fried, curried or as a side dish or a meat substitute and added to salads, soups, breakfast porridges and puddings.

    Once you have washed the protective saponin coating from your premium Tasmanian Quinoa, you can also use the remnant mildly soapy water for washing your dishes after enjoying a delicious feast! The saponins contained in Quinoa have been shown to lower cholesterol.

    Simple ways to include more quinoa in your diet:
    * Make quinoa porridge for breakfast and top it with your favourite fresh fruit or berries
    * Use rolled quinoa as a gluten free breakfast porridge or cereal.
    * Use quinoa flour when baking bread or muffins
    * Next time you are looking for an alternative to potatoes or rice, make a nutritious side dish with quinoa
    * Mix in cooked quinoa to your favourite salad or sandwich filling (e.g. chicken or tuna with mayonnaise and quinoa)
    * Add cooked quinoa to your favourite soup or stew

    What is the difference between Quinoa and Amaranth and what traits so they share?

    Nutritionally quinoa and amaranth are very similar; they are higher in protein than rice and contain all your essential amino acids unlike most grains. Both grains originated in South America; historically quinoa was grown by the Incas and the Aztecs grew amaranth. They both sprout a little tail once cooked and are gluten-free.

    From a culinary perspective, quinoa is a much more versatile grain and can be used in any recipe calling for rice. It can also be used in soups, stews and salads and makes a great pilaf. Amaranth is a smaller grain and is usually used to thicken soups or casseroles. They can both be mixed with rice and served combined.

    Apart from the colour, red and white quinoa are very similar and can be used in the same recipes. Red quinoa has a slightly more fibrous texture and is a little crunchier once cooked. It will take about the same time to cook both types of quinoa.
